Tropical Mango Salad For Summer

I strongly dislike cooking a hot meal in the summer months, and don’t really enjoy eating that way either. Salads are a go~to for me and today I’m going to share one of my favorites, so read on.
Mangos are in season here in Miami and although we have no mango trees on our property they are falling all over the ground in the neighborhood and ready for the taking.
This salad took about 10 minutes of prep time.

I’ve taken your standard grocery store bag of a butter lettuce mix and topped it with the following:
Fresh mini heirloom tomatoes, cut in half
Bagged shredded carrots (cheating, I know:-)
Leftover chicken made for my husband last night and cut into bite sized pieces
1/2 apple cut into chunks
Almond slices from the bag
Mango (small) cut into pieces
And topped with…
From Trader Joe’s…yummy tropical mango pineapple salsa and a dash of crumbled goat cheese. I drizzled some olive oil over the top for a dressing and nothing more was needed with loads of flavors to swirl and meld in the mouth.
Easy and fast and cool on these hot summer days and served with a warm loaf of ciabatta bread would make for a satisfying dinner as well.
