Healthy Blueberries...Breakfast and Snacking

I know that you are probably thinking...how can blueberry muffins be healthy? Well the truth is that they can be loaded with sugar, but they don't have to necessarily break the health bank if you make your own and keep the sugar content low and the muffins small in size. This isn't a recipe post, but those abound on the internet and when I make muffins I like to save some extra fruit and use in other ways...
What got me thinking about my daily blueberry fix today was actually this desk, which my daughter found next to a dumpster in an apartment complex that she was living in. The blueberry doesn't fall far from the tree, or something like that:~))! The color reminds me somehow of blueberries and it's perfectly chippy...
But seriously, I do eat blueberries almost every day. They are powerful in antioxidants and can be combined with other super foods that normally you might not consider. Surprisingly good for a tangy snack are cucumber slices with fresh goat cheese dressed with a blueberry on top...
The cuke is fresh tasting, the chèvre is tangy and the blueberry adds a burst of good flavor. You can also drizzle a bit of honey over it...mmmm!
For a cool and power filled pre workout breakfast I'll often grab some yogurt and mix in fruit and granola. Today I made up a cup full of plain Greek yogurt and mixed in fresh strawberries and blueberries. The strawberries burst to give the yogurt a pink color...
Topped with granola and almonds it's very filling and energy giving, not to mention delicious! Using favorite china and silver makes it more special...
