Best Mango Bread Recipe and Mango Salsa Recipe

Best mango bread recipe and a favorite easy recipe for mango salsa today too! Mangos have more vitamin C than oranges serving per serving and are deliciously sweet. Mangos are seasonal to summer where I live in Miami and this year there is a bumper crop! I can hardly keep up with how many are just falling off the trees. I peel them and take the meat of the fruit out and dice it, then freezing in zip bags for year round use. My best mango bread recipe is sweet and similar to the consistency of a banana bread. It can be sliced and eaten toasted with some butter or jam for breakfast or for a snack or dessert.

Mangos come in various varieties and are available at the grocery store, sometimes year round. Try and select mangos that are firm but not hard and let them ripen on the counter. They do not need to be refrigerated but I find that if slicing to eat or for a recipe an hour in the fridge makes the slicing easier.best mango bread recipe

If you’ve never had a mango before you might be surprised at how large the pit is. Slice into the skin all the way to the pit, making four lengthwise cuts. Then peel off the skin and start slicing the fruity pulp to the pit to remove. It can be a bit of a messy process slicing a mango and some are easier to slice than others.

Best Mango Bread Recipe

Mango bread is fairly simple to make and a delicious bread toasted for breakfast or as an afternoon snack filled with vitamin C and sweet goodness!

Ingredients

  • 6 Mangos - peeled and chopped About 2 1/2 cups
  • 3/4 cup vegetable oil
  • 1 tsp fresh lemon juice
  • 2 eggs
  • 2 cups all purpose unbleached flour
  • 2 tsp ground cinnamon
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup organic white sugar
  • 1/2 cup raisins (optional)

Instructions

  • Combine dry ingredients in a large mixing bowl.  
  • Add mango, lemon juice and raisins. 
  • Beat eggs with oil and add to flour mixture.
  • Pour into 2 greased 8 x 4 loaf pans. Bake at 350 degrees for about an hr or until toothpick comes out clean.

My second recipe to share is for mango salsa. I made a big batch and serve this over fish, shrimp, in a salad…and it’s even good over a slice of crusty French bread as an appetizer!

An easy recipe for mango salsa that is delicious on fish or as a dip for hearty chips!

Ingredients

  • 1 mango peeled and diced
  • 1/2 cup English (seedless) cucumber
  • 1/3 cup red onion, diced
  • 2 tbsp chopped jalapeno pepper
  • 1 tbsp fresh lime juice (or lemon)
  • 1/2 cup chopped fresh cilantro

Instructions

  • Add all ingredients in a medium bowl and stir. No cooking required.

  1. That Mango bread looks amazing!!! My MIL turned Vegan last year to control her Type 2 diabetes (which is now completely gone!) and she makes some really delicious things which inspired me to try and make better choices when shopping. She got me into steel cut oatmeal too, so good!
