Simple Summer Salad In The Garden

entertaining outdoors in the summer and a recipe for summer salad

Hidden in a path towards the back of our property is a quiet spot situated underneath a large Plumeria tree that blossoms throughout early spring and summer spilling pink petals that scatter like raindrops and give off a sweet tropical scent. It's here that I love to...

...escape to with my thoughts and coffee in hand whenever possible and greet the day. The birds often bathe in the old softly tinted birdbath when it naturally fills during a summer storm. I love to entertain out here, but it's just a table for four, so it's not for huge partying unless I changed things around...

To get here, you need to walk across the path that we made some years back by leveling the ground, digging shallow areas to set the flagstone and filling with pea gravel. It's probably in need of a good cleaning, but I love how it's filled in with tiny ferns and some weeds...so we leave it for now...

Just beyond the path and patio is the water and another spot to entertain on the dock. It's definitely a luxury to be separated in space from the neighbors and a plus for being out in the suburbs of this town. Privacy and quiet are soul soothers...

breakfast outdoors

The sun is just coming through the shrubs and not only do I love sitting out here to eat meals when possible, but to practice the art of clearing my mind and meditating. It's a great way to start out or end a thought filled day...

salad with summer fruit

I've used some of those beautiful red strawberries in my salad these evening and here is my recipe if you'd like to try it:

Summer Simplified Salad

Romaine Lettuce torn into bite size pieces.
Chicken breast slices and in this case they were precooked and packaged.
Summer fruits: Strawberries, blueberries, orange slices and cut pineapple.
Toasted walnuts (or any variety of nuts that you prefer).
Optional: crumbled feta or goat cheese.

Toss and add salad dressing of your choice. I use a simple vinaigrette sweetened with honey.
Serve with French bread for a light and yet filling healthy meal...
