…escape to with my thoughts and coffee in hand whenever possible and greet the day. The birds often bathe in the old softly tinted birdbath when it naturally fills during a summer storm. salad with summer fruit

I’ve used some of those beautiful red strawberries in my salad these evening and here is my recipe if you’d like to try it:Summer Simplified Salad

Romaine Lettuce torn into bite size pieces.
Chicken breast slices and in this case they were precooked and packaged.
Summer fruits: Strawberries, blueberries, orange slices and cut pineapple.
Toasted walnuts (or any variety of nuts that you prefer).
Optional: crumbled feta or goat cheese.
Toss and add salad dressing of your choice. I use a simple vinaigrette sweetened with honey.

Serve with French bread for a light and yet filling healthy meal…

I’m joining in this week with a talented group of blog friends who are sharing inspiration for Summer Simplified. I hope that you visit them too!
